Dish it Out: Easy Summer Eats

Don’t you hate being in the kitchen cooking and sweating away next to the hot oven in the summer? Here are two quick, easy and healthy side-dish recipes I have been making over and over again this summer.

Roasted Veggies

My favorite thing about this dish is that it’s easy to customize to your own liking with the type of vegetables, type and amount of spices

Prep time: 15 mins
Cook time: 45 minutes
Total time: 1 hour

~ your favorite roasting vegetables (I used okra, carrots, eggplants, mushrooms and bok choy to name a few)
~ your favorite spices (I used black pepper, salt, paprika, cumin, cayenne pepper,


~ Preheat oven to 350°F/180°C
~ Chop up all vegetables and put in a big bowl.
~ Add in as much or as little spices as you desire.
~ Put in the oven for 45 minutes.


Corn on the Cob


I absolutely loved grilled corn on the cob so I found an easy way to do it with an oven!

Prep time: 5 mins
Cook time: 30 minutes
Total time: 35 minutes

~ corn cobs (with husks)
~ butter
~ salt
~ pepper/other spices


~ Preheat oven to 350°F/180°C
~ Melt butter in a bowl in the microwave.
~ Pour butter over corn cobs.
~ Put spices on top of the corn cobs.
~ Place in oven for 30 mins
~ Remove husks and enjoy!
